We wrote
last November, 2003:
Jaan opened
late 2002, and to celebrate its first
birthday, chef Nam Nguyen launched
a brand new menu. The restaurant
is located in the Swissotel Howard,
operated by the Raffles group. Don't
be put off by prejudices against
hotel restaurants, this is a
lovely dining room and you can expect
exemplary attention from really professional
waiting staff.
This
was a truly memorable meal, excellent
cooking, fine and interesting wines,
and very gracious and unobtrusive

Paul Peters,
the new executive chef at JAAN
Australian born Paul Peters has joined
JAAN as its new Executive Chef. He
comes from Mju in Knightsbridge, where
he held 3 AA Rosettes. Prior to this
he was Sous Chef to Andrew
Turner at 1837 at Brown's Hotel.
At JAAN, Paul Peters creates delicious
French cuisine with southeast Asian
influences. Since his appointment he
has gradually introduced a broader
range of Asian ingredients to the menus,
such as Yuzu dressing, which is made
from the Japanese fruit Yuzu; Shiso
Leaf; and Mugi Miso, which will be
used to complement meats such as duck
and foie gras.
The new menus feature dishes such
as Scallop and Duck Two Ways, which
comprises sashimi of scallop, soy,
white sesame oil with duck consommé,
and seared scallop with a crispy duck
spring roll; and Duo of Foie Gras,
consisting of port cured foie gras,
ginger tuille and ginger sorbet, and
pan-fried foie gras with raisin purée
and apple jelly.
Other dishes which feature on the
menus are Langoustine Crusted Turbot
with lobster cous cous, water spinach,
ginger and coconut bisque, and crispy
leek; and Trio of Veal which comprises
pan-fried veal fillet on baby spinach,
braised veal cheek, cardamom, cinnamon
and vanilla mash, veal sweetbreads,
chicory and truffle foam.
