Bruno
Cicco, the front man of perhaps the
finest restaurant in Sussex
At
just 28, Bruno Cicco is enjoying
an illustrious career and experiencing
the very best his profession can
offer. His new position as Host and
Restaurant Manager at One Paston
Place, one of the finest restaurants
in the region, is just reward for
his years of dedication to the job
he truly loves. His French and Italian
parentage instilled of love of good
food in Bruno from a young age. Moving
to Paris at the earliest opportunity
then gave him the chance to pursue
a career in the heady world of fine
dining.
He
progressed quickly through an impressive
series of highly regarded Michelin
Star restaurants and at 22, was the
youngest waiter to be promoted to
the esteemed position of Chef de
Rang when working in Monte Carlo
at Alain Ducasse’s restaurant, Louis
XV. His time in Monte Carlo saw him
serving not only A-list celebrities
including Pele and Bono, but also
King Abdul Aziz and the Monegasque
Royal Family - The Rainiers.
In
2000, Bruno headed to London to work
as Chef de Rang at Marco Pierre White’s
Mayfair restaurant Mirabelle. He
was then given the position as Maitre
d’Hotel at the Michel Roux, three
Michelin Star Waterside Inn, and
then in 2003 he went on to become
Maitre d’Hotel at The Ritz.
A
desire to escape the hustle and bustle
of the city bought Bruno to Brighton
and the position at One Paston place
was perfectly timed for his arrival.
Bruno told Dine-Online that he had "heard
a lot about One Paston Place, because
it has an outstanding reputation
as the finest restaurant in the South
East. Naturally, I am delighted to
be part of the fantastic team who
make the restaurant such an exceptional
experience.”

have worked in some amazing locations,
for some of the largest and most
notable restaurants in the world.
While that experience is invaluable
to me, the intimacy and elegance
of One Paston Place cannot be beaten.
I love being in Brighton, it is an
exciting and vibrant place to live
and I look forward to getting to
know the city, the people and all
the One Paston Place regulars! My
dream is to achieve my first Michelin
Star alongside Francesco and the
Paston Place team.”
Also
joining Bruno on the Paston Place
team is new sommelier Angelo di Giampaolo.
Angelo is originally from Rome and
has worked with industry luminaries
such as Gordon Ramsay and Sir Terence
Conran. Angelo replaces Aaron Winwood,
who was headhunted by the Toyota
Formula One team. One Paston Place
is run by husband and wife team Rachel
Turner and Italian Head Chef Francesco
Furriello. They run the type of stunning
restaurant one might expect to have
to travel up to London to visit.
Tucked away in Brighton’s Kemp Town
the light, classically stylish interior
offers luxurious eating without a
whiff of the stuffy or intimidating
atmosphere that so often comes hand
in hand with fine dining.

magazine’s June 2005 issue voted
East Sussex restaurant One Paston
Place as the number one Italian
restaurant in the UK. A list of
26 restaurants, including Carluccio’s
and Locatelli’s in London, were
awarded a star rating by the high
profile magazine. Head Chef at
One Paston Place, Francesco
Furriello, was awarded 7 stars
beating the competition by a mile
and hailing him the top Italian
Chef in the UK.
